Chocolate Brandy Truffles
40 g (1 1/2 oz) blanched almonds
5 Tbsp brandy
80 g (3 oz) melted chocolate
100 g (4 oz) icing sugar
Cocoa, to taste
• Blend the almonds and brandy with a hand blender until fairly smooth.
• Pour in the melted chocolate and combine.
• Add the icing sugar until you get a stiff paste.
• Roll the truffles into balls and leave to set. Roll in cocoa or dip in chocolate.
Makes 8 to 10 truffles
