Celebrate a Vegan Christmas With Delicious Recipes

As the holiday season approaches, it’s time to plan a festive and cruelty-free Christmas feast that everyone can enjoy. Discover two mouth-watering vegan recipes by chef Rishu Sharma of Plan B foods that will undoubtedly steal the show at your Christmas gathering: Vegan Apple Pie and Vegan Mushroom Risotto.

Vegan Apple Pie

For the Pie Crust

300 g refined flour
5 g salt
45 g icing sugar
5 g ground cinnamon
150 g refined coconut oil
50 ml water

For the Filling

5 apples
2 lemons
1 Tbsp refined coconut oil
90 g icing sugar
60 ml Veganday almond milk
1 pinch ground cinnamon
30 g Plan B Parmesan Seasoning

Method

    • To make the crust, in a mixing bowl, combine the flour, salt, sugar, and cinnamon. Add the coconut oil and mix well.
    • Add the water and form a dough.
    • Roll three-quarters of the dough into a thin circle larger than the pie mould.
    • Brush the mould with coconut oil and dust with flour to prevent sticking.
    • Arrange the dough in the mould and prick several times with a fork.
    • Bake at 180ºC/356ºF/gas mark 4 for 20 minutes.
    • Meanwhile, make the filling. Peel and slice the apples, add them to a pot, and cook them with the coconut oil, sugar, vegan milk, cinnamon, and PLAN B Parmesan Seasoning over medium heat until caramelised.
    • Remove the crust from the oven and add the filling.
    • Roll the remaining dough, slice it into strips, and arrange over the filled crust.
    • Bake at 220ºC/425ºF/gas mark 7 for 10 minutes or until golden brown.
    • Dust with icing sugar and serve.

Vegan Mushroom Risotto

Ingredients

50 g olive oil
3 cloves garlic, peeled and finely chopped
1 leek, finely chopped
15 g fresh thyme
140 g Arborio rice
500 ml vegetable broth or water
20 g shitake mushrooms, soaked overnight and sliced
20 g porcini mushrooms, soaked overnight and sliced
50 g button mushrooms, sliced
Salt and black pepper, to taste
100 ml Veganday almond milk
30 g Plan B Parmesan Cheese
Small handful fresh parsley, chopped

Method

  • Heat the oil in a pan and cook the garlic and leeks until browned.
  • Add the thyme and Arborio rice and mix well.
  • Gradually add the vegetable broth or water while stirring continuously.
  • Add the mushrooms and continue cooking until the rice is tender.
  • Season with salt and pepper, then add the almond milk, Plan B Parmesan Cheese, and parsley.
  • Mix well and remove from the heat.
  • Garnish with grated Plan B Parmesan Cheese and chopped parsley and serve.
